Winter Light – Mont Blanc Recipe

Ingredients (for 1 glass, approx. 200–250 ml)

  • 8 g (≈ 3 tsp) black tea and spiced tea blend with cocoa
  • 250 ml water (100 °C / 212 °F)
  • 40–50 g fresh cream or vegan alternative
  • 5 g (≈ 1–2 tsp) maple syrup
  • 5 g (≈ 1 tsp) vanilla syrup
  • Date sugar for garnish

Preparation

  1. Brew 8 g of the tea blend with 250 ml of boiling water (100 °C / 212 °F) and let steep for at least 6 minutes.
  2. Strain the tea.
  3. Stir maple syrup and vanilla syrup into the hot tea.
  4. Shake the cold cream vigorously for about 10 seconds, or lightly whip with a milk frother until thickened but not stiff.
  5. Pour 180 ml of tea into a heatproof glass.
  6. Gently pour the cream over the back of a spoon onto the surface, allowing a clear layer to form.
  7. Sprinkle with date sugar.

Tip: The contrast between the dark tea and the bright cream layer looks especially elegant in a straight-sided glass.
