Our DAIKOKU is a Kabusecha, a partially shaded tea. One to two weeks before harvest, the tea plants are covered with a dark net. This process results in an intense green color and a strong umami flavor.

As a result, Kabusecha develops a rich umami flavour and a vibrant deep-green colour.

DAIKOKU is a high-quality Kabusecha from Japan that combines the fresh character of Sencha with the deeper umami notes typical of shaded teas. The short shading period gives the tea a complex flavour profile with fresh green notes and a delicate natural sweetness.

Kabusecha is known for its balanced and layered flavour. Typical characteristics include fresh green tea notes, a noticeable umami depth and a gentle sweetness. Depending on origin and processing, you may also notice nuances of fresh grass, vegetable-like notes or light fruity accents.

The main difference lies in the shading process. Sencha grows fully exposed to sunlight, while Kabusecha is shaded for a short period before harvest. This shading allows Kabusecha to develop more umami and often results in a softer, rounder flavour compared with many traditional Sencha teas.

Both Kabusecha and Gyokuro are shaded teas, but the duration and intensity of shading differ. Gyokuro is shaded for a longer period, which produces a very intense umami flavour. Kabusecha sits somewhere between Sencha and Gyokuro in taste, combining fresh green notes with a gentle umami depth.

Yes, Kabusecha contains caffeine because it is made from the tea plant, Camellia sinensis. Like many Japanese green teas, the caffeine provides a gentle and sustained lift that many tea drinkers describe as clear and balanced.
