How to Brew for the Best Results

The more delicate the leaf, the cooler the water. Brew Gyokuro and Kabusecha at 120–140°F (50–60°C) for 1–2 minutes — otherwise, they can turn bitter. Oolong can handle more heat, around 185–205°F (85–95°C). For Matcha, use water around 160–175°F (70–80°C) and whisk until smooth and frothy.
