Our PRAISE OF SHADOWS is a Gyokuro, a premium green tea specialty from Japan. Unlike other teas, it is shaded from direct sunlight three weeks before harvest. This process allows the tea leaves to develop a fine sweetness, grassy notes reminiscent of seaweed or a fresh ocean breeze, and the characteristic umami flavor of Japanese teas.

The processing of the tea

Three weeks before harvesting, the plants are covered with dark nets. This unique growing technique is typical for Japanese tea cultivation giving the leaves a deep green color and developing the complex umami flavor. This makes Gyuokuro one of Japan's most popular teas.

The origin of the tea

Located at the southern tip of the Japanese volcanic island of Kyushu, the celebrated tea-growing region of Kagoshima boasts excellent conditions for tea cultivation, with ample rainfall and a warm climate. The region has gained a stellar reputation through its innovative farming techniques and dedication to producing high-quality varieties, especially Gyokuro, Matcha, and Sencha.

Gyokuro is a premium Japanese green tea, renowned for its high quality and refined flavour. The name "Gyokuro" translates to "jade dew" in English, referring to the deep green colour of the dried leaves.
Gyokuro has a rich, sweet flavour with a strong umami profile. Its soft, velvety texture and lingering sweet aftertaste make it a popular choice among tea connoisseurs.
Gyokuro is special due to its unique cultivation method. Known as "shade-grown tea," the plants are shaded for several weeks before harvest. This process imparts the tea with an intense, sweet umami flavour and a soft texture, setting it apart from other green teas.
Gyokuro should ideally be prepared at a temperature of 60-70°C. Allow the tea to steep for about 1 minute to bring out its delicate aromas and rich flavour.
The main difference between Gyokuro and Sencha lies in their cultivation methods. Gyokuro is shaded, while Sencha is grown in full sunlight. This leads to different flavour profiles: Gyokuro is rich in umami with a sweeter note, whereas Sencha is fresher and grassier.
Gyokuro is expensive due to the intensive cultivation techniques, limited availability, and meticulous processing. The shading of the fields and the hand-picking of leaves contribute to the production costs, justifying its price.
